Baked Zucchini and Carrots

This is a supper easy side dish to pretty much any protein. You can add more veggies if you like. You can even mix up the seasonings to it. But this is my basic recipe that I use for baked veggies. We love baked veggies and the leftovers ideas are endless. I repurpose my baked veggies in a pot pie or in a hash for breakfast. This will help you get your veggies in for sure! Enjoy!

Ingredients:
3 zucchinis
1 small bag of carrots, I used Trader Joe’s colorful carrots
2 tbs avocado oil
Salt and pepper taste

Directions:
1. Preheat oven to 425 degrees.
2. Cut zucchini and carrots up into chunks and place in a mixing bowl.
3. Add oil and salt and pepper, mix well. Transfer to baking sheet and bake for about 25-30 minutes (until tender).
4. Serve and enjoy!

 

Honey Dijon Salmon

This marinade is awesome. I use it on fish all the time. The cool thing about this recipe is that you can cook it at the same time your cooking the baked veggies. So it lends to a super easy and delicious dinner anyone can make. For the rice under the Salmon, I just used instant brown rice. See…So….Easy!

Ingredients:
3 pieces of salmon
½ cup Dijon mustard
2 tbs minced garlic
3 to 4 tbs honey (to taste)

Directions:

1. Preheat oven to 425 degrees.
2. Put salmon filets on baking sheet, salt and pepper both sides.
3. Combine Dijon, garlic, and honey to create marinade.
4. Put marinade on top of salmon, coating it.
5. Cook in oven for about 20-25 minutes.
6. Serve and Enjoy!
