Leftovers: Baked Zucchini and Carrot Breakfast Hash

I told you I loved to use my baked veggies over. I made a hash with last nights baked veggies. Super healthy and super yummy. Enjoy!

Ingredients:
Leftover Baked Zucchini and Carrots
2 to 3 eggs (depending on how much leftovers you have)
1-2 Trader Joes chicken sausage
Salt and pepper, to taste

Directions:
1. In a deep-frying pan, scramble eggs. Once cooked, put in bowl and set aside.
2. Cube sausage and put in the same pan you cooked eggs with leftover veggies, heat through.
3. Once sausage is cooked and veggies are heated through add eggs to reheat them. Salt and pepper to taste.
4. This usually serves at least two people, sometimes more—Enjoy!
