This salad is awesome. I found this recipe on Pinterest, and of course I added my own flare to the recipe. I literally felt like I was eating a Greek salad in my favorite restaurant. You can add Kalamata olives and Feta cheese crumbles to really finish this salad off right. Absolutely delicious!
Ingredients:
• For the dressing:
• 3 tablespoons grapeseed oil
• 1 tablespoon fresh lemon juice
• 2 teaspoons red wine vinegar
• 1-2 garlic cloves, pressed
• 1 1/2 teaspoons dried parsley
• 1 teaspoon sumac
• 1/2 teaspoon dried mint
• 2 to 3 teaspoons Dijon mustard
• 2 to 3 tablespoons balsamic vinegar (to taste)
• salt & pepper to taste
• For the salad:
• 3 Persian cucumbers, chopped
• 1 batch of cherry tomatoes, cut in halves
• 1/2 medium red onion, halved & thinly sliced
• optional: sliced radish and or chopped romaine (I did both)
Directions:
• For the dressing:
• In a small mixing bowl, whisk all ingredients until well combined, and set aside.
• For the salad:
• In a large mixing bowl, toss all ingredients together. When ready to serve toss salad with dressing and top with torn pita pieces.
