Today is Friend Friday. Amy and I shared a healthy, Greek inspired meal with our friend, Sarah, and Amy’s husband, David. And it was delicious.
The hor d’oeuvres were crudites and roasted red pepper hummus. (See top picture. The main course was 4 totally scrumptious dishes. Moussaka made with eggplant – a layered dish that demanded seconds.
Next were stuffed mushroom caps with spinach, dill and feta. So good.
Then we had Greek style green beans with onions, tomatoes and feta cheese.
There was an out of this world salad with balsamic dressing – fresh made. There is a special name for the salad but I don’t remember it. ☹
Then dessert but I forgot to take a picture. It was a parfait made with Greek yogurt, pumpkin and molasses. It was the perfect conclusion to our meal.

Everything was made from scratch. Amy is such a good cook and willing to try just about anything. Clean eating at its finest.
