This is an awesome casserole dish. It gives you the meaty taste and just is absolutely busting at the seems with veggies. Healthy never tasted so good. The recipe calls for veggie tots, but don’t be afraid to make a cauliflower mash to top this casserole. The mash way is my favorite—it gives you a new take on a Shepard’s pie. My family loves this—and really who doesn’t like a delicious casserole?
Ingredients:
2-3 Tbs avocado oil
1 cup carrots, diced
½ cup celery, diced
1 cup parships, diced
1 medium white or sweet onion, diced
1 can of diced tomatoes, drained
3 to 4 garlic cloves minced
1 to 1 ½ cups of baby bella mushrooms, diced
2 lbs ground meat (grass feed beef or bison)
2 recipes of Classic Ranch Seasoning:
`1 tsp dried dillweed
`1 tsp dried parsley
`½ garlic powder
`½ tsp onion powder
`½ tsp pepper
2-3 Tbs arrowroot powder (mixed with broth of veggies and meat)
Salt and pepper to taste
Topping:
2 heads of cauliflower, boiled
¼ cup of ghee or clarified butter
Salt and pepper to taste
Directions:
1. Preheat oven to 375 degrees.
2. In a large pot add oil, carrots, celery, parsnips, onion, garlic, and mushrooms. Cook until veggies are soft and mushrooms are done.
3. Add meat and cook until meat is done.
4. Add ranch seasoning and stir until completely incorporated into the dish. Then add tomatoes and allow to simmer.
5. Take out about ½ cup broth from pot and set aside. add the arrowroot flower to broth. Stir until dissolved then pour it in the pot and stir until completely incorporated and allow to boil. That is how you thicken the broth in pot. Once it has thickened pour meat and veggies into a large casserole dish.
6. Top with veggie tots (I buy them in the freezer section). Or top with cauliflower mash for a shepherd’s pie feel. Put in the oven for 15 to 20 minutes to brown top of mash or follow directions on cooking tots on package.
7. Serve and enjoy!
