I absolutely love stuffed cabbage, but they contain rice. So, for my diabetic lifestyle I created a recipe that had no rice and was supper easy for a mommy to make—because face it making stuffed cabbage is time consuming. I only make true Stuffed cabbage when I have time. Which isn’t often, but with this deconstructed dish I am able to have that flavor I love in minutes!
1 small to medium cabbage, sliced in slivers
1 onion, diced
2 celery stalks, diced
10 precut carrots, diced
2 tbs garlic, minced
2 lbs. of ground meat
2 tbs of avocado oil
2 cans of diced tomatoes
1 tbs dried rosemary, crush with fingers
1 tbs sage
Salt and pepper to taste
1. In a large pot add oil onions, garlic, celery, carrots and cook till onions are see through and carrots and celery are starting to get soft.
2. Add ground meat and salt and pepper, cook until meat is browned and cooked throughout. Add rosemary and sage stir and cook for about two minutes, then add tomatoes. Bring to a boil for about 5 to 7 minutes.
3. At this point cook like my grandma does: taste it and add more seasoning if needed.
4. Add cabbage and cook until it is soft and not crunchy.
5. Serve and Enjoy!!
