Ok let me just tell you, I didn’t really believe in homemade veggie chips. Until now!!! These chips have crunch! Some more than others but the taste is so good! This recipe is so easy you can do it blind folded. I made it with my mother in law visiting in our home and I went to put my daughter down for about 10 minutes and when I came out to the kitchen to put the chips up…one of the three trays I made was gone. No better kudos than that!
Ingredients:
2 zucchini
2 tbs avocado oil
Salt and pepper to taste
Directions:
1. Preheat oven to 250 degrees. Wash zucchini and cut ends off. Use a mandolin to cut into thin pieces.
2. When cutting is done, put in bowl and add oil and salt and pepper and stir till combined well. Add salt and pepper slowly and taste to not over power the chips.
3. Use parchment paper to line baking sheets. Place zucchini in rows. Bake for about 1 1/2 hours or till crispy and brown.
4. Serve and enjoy!
