KEEP IT SIMPLE

Today I want to talk about a product I found in the grocery store that could make your meal prep time easier and shorter. I am all for whole foods and less processed food but that does not mean that I am for lots of prep, steps galore and fancy skills. No, I am for healthy, easy and practical.
I found a product by Full Green called “Cauli Rice.” It is pre-shredded cauliflower that you can use instead of white rice. The one I picked up was Cauliflower Rice with broccoli. The ingredients list is: cauliflower (60%) and broccoli (40%). That’s it. Just cauliflower and broccoli. You could do it yourself – chop the cauliflower and broccoli until they are uniformly small – but why would you when you can get someone else to do it for you?
This is a real timesaver. You microwave the contents for 2 1/2 minutes and you have a side dish ready to put on the table. Are you running late and everyone is hungry? Hot vegetable coming up. Add some left over meat – like chicken – and a salad and you are feeding the family a healthy sit down meal that is ready in approximately 10 minutes.
Of course this requires a little pre-planning on your part. These cauli – rice products are shelf stable and can be found in the rice section of the store. I found them at my local Kroger’s.
So today’s baby step is to be prepared for those times when you are running late or you just don’t feel like making a big to-do about dinner. It’s OK to use something that is just as good as you could make – if it is healthy. Yay if it knocks out one of your prep steps! Life is short – enjoy the healthy short cuts.
