Super easy breakfast egg. This is so luxurious. It is crying for a nice piece of toast or and toasty English muffin and some fresh fruit to accompany it, however I can’t have that yet (due to my surgery)—but you add it. 😊 I found several recipes on Pinterest that were similar to this one, but I just felt there was way too much ricotta and not enough spice (go figure), so this is my version. My husband gave two thumbs up for this dish as well.
Ingredients:
2 eggs
1tbs butter or ghee
¼ cup milk
¼ cup of skim ricotta cheese (or less, taste)
Salt and pepper to taste
1 tsp paprika, and some to garnish
1 tsp chives to garnish
Directions:
1. Mix eggs and milk together while the butter is melting in your favorite scramble egg pan. Scramble your eggs to your desired done-ness.
2. Take eggs off heat and add ricotta cheese and paprika and mix well. Add salt and pepper to taste.
3. Plate your eggs and sprinkle them with paprika and chives. Enjoy!
