Tuna Steak A La Amy with Mushroom Cauli Puree

Since surgery, my food has consisted of liquids. I have sorely missed flavor and crunch and chew. However, my tummy is not yet ready for crunch. I am still on soft food. So, this recipe hits the soft tender needs of my healing tummy with flavor that my taste buds have been missing. The Ingredients may look strange but give it a chance! It is delicious! My husband went back three times for more. So that just tells me he loved it, that and the many several times he told me he loved it. 😊

1 to 2 Tuna Steaks
For the Marinade and Sauce:
¼ cup soy Sause
4 tbs hoisin sauce
¼ cup mango habanero pickle juice
9 diced mango habanero pickles
1 tbs garlic
3 to 4 tbs honey (to taste)
Salt and pepper to taste
For the Mushroom Cauli Puree:
1 head of cauliflower
1 8oz box of sliced mushrooms
1 small sweet onion
2 to 3 tbs garlic
2 to 3 tbs butter or ghee
¼ to ½ cup grated parmesan cheese
1 cup of Greek yogurt
2 tbs of chives for garnish
Salt and pepper to taste
1. In a deep bowl add all the marinade ingredients and add tuna steaks to marinade about an hour, flipping them in marinade about half way (30 mins on each side).
2. While fish is marinating, cut up the head of cauliflower and set aside. In a large pot add water, a good amount of salt and garlic and some chicken bouillon and let the water come to a boil. When water is boiling at cauliflower and boil until fork tender.
3. While cauliflower is boiling, in a large skillet add onion, mushrooms, garlic, and butter and cook until onions are see through and mushrooms are tender. Set veggies aside.
4. Drain cauliflower and put into a blender. Add 1 cup of Greek yogurt, mushrooms and onions, and parmesan cheese and blend until mixed well. Add salt and pepper to taste and set aside.
5. In skillet, put a little butter or ghee to coat pan and cook tuna steaks. Before cooking them add salt and pepper to both sides and cook each side around 1 to 2 minutes to the desired done-ness. When tuna steaks are done set aside to rest and make sauce.
6. Pour the marinade in skillet and simmer until it gets thicker.
7. Make plate and sprinkle with sauce on top and enjoy this wonderful dish!
